After an extensive cold soak, 80% whole berries
were fermented in small open top fermenters.
Gentle punch downs and pigeage.
Barrel aged for 20 months.

Light -medium body. Delicate aromas of black cherry, strawberry, kirsch liquor, pepper and spice.
